Are you ready to carve your jack-o-lantern and scoop out its slimy guts?? I used to throw mine away and now I want to cry for all the deliciousness I casually tossed aside. Admittedly, I did so to see if I could grow my own but all I ever got were cute little gourds- never the robust pumpkins one sees in a legit pumpkin patch. Sigh. Oh well. I digress to my pumpkin-growing dreams… Now, onward to give you some nifty info on WHY you need to consume these powerhouse seeds!
*LOADED with nutrients: copper, magnesium, phosphorus, maganese, zinc, vitamin E and iron. They also have an anti-microbial property to them as well which can keep your immune system on high. And who doesn’t need that as we descend into the season of yuck?
*MOOD food. There must be something with “fall” foods that contain all that tryptophan but yup, just like the turkey, these little seeds contain it as well. We won’t get it in the same proportion as when we consume the bird. This little bit will go a long way–it will convert into serotonin which is a popular neurotransmitter allowing us to feel good!
* FREE radical-loving game ON! These awesome seeds will contribute to kicking the pants off those bad boys.
These are SO easy to make, too! SO many variations! Play with your food- make it savory or sweet. Here is ONE way to make is so very yum:
In a large bowl toss the following spices in with your pumpkin seeds (sorry I just don’t measure stuff like this lol) :
(or just get a Pumpkin or Apple Pie Spice spice mix)
Lay some parchment paper on a cookie sheet then drizzle with pure maple syrup or honey.
Bake at 375 for about 15-20 mins on a top rack, checking them for crunchiness at about the 15 mark.
